Pietrafitta is located in Upper Tuscia, between Vulci and Ischia di Castro.
The organic farm structure, which stands centrally with the Manor House, is surrounded by the cultivated fields, olive groves and oak groves which create the resort of Pietrafitta.

The surrounding fields are intended for different types of crops always according to a biological and sustainable vision. Depending on the season, vegetables, legumes and cereals are produced; these fully benefit from the properties of the fertile soil, a very mineral soil enriched by the presence of aquifers of thermal water in the subsoil. All stages of processing are strictly respected over time and according to the family tradition that is passed down from generation to generation.

Pietrafitta is also a holistic experience. For those who love the refinement and luxury of nature, they can refresh themselves in the luxury apartments of the farmhouse structure. The stunning and magnificent swimming pool that overlooks the valley, offers sunsets that leave a lasting impression in the heart, morning energetic awakenings, moments of well-being and relaxation that enrich those who choose to enjoy them with pleasure.
Each structure is independent to the others, ensuring autonomy and privacy to all guests. The oak wood creates the magic of being out of time, while walking admiring the specimens of peacocks wandering free in the meadows.
For lovers of equestrian tourism it is possible to organize walks and excursions to the wonderful surrounding tourist and archaeological attractions (Tomba François, Castello dell'Abbadia, Archaeological Park of Vulci, Path of the Brigands -Sentiero dei Briganti, Hermitage of Poggioconte, Fosso Strozzavolpe waterfall, Paternale waterfall).

The Recipes

“Solco dritto” Chickpea delicate soup
Ingredients for 3 people:
-300 gr of “Solco dritto” Chickpea;
-150 gr of short high-quality pasta;
- selected tomato sauce;
- red garlic;
- rosemary, salt, pepper;
- Olistico Extra Virgin Olive Oil.
Soak the chickpeas in abundant water (salted and with a pinch of bicarbonate) for at least 12/18 hours. Boil them in cold water for at least 2 and a half hours.
Put extra virgin olive oil, red garlic and rosemary in a pan, sauté and allow to flavor. Pass everything through a sieve and add some chickpeas to the pot, without draining them. Put a few tablespoons of tomato sauce and salt if necessary. Cook for 10 min, add the pasta.
At the end of cooking it is advisable to embellish with raw Olistico olive oil, pepper and a sprig of rosemary.

Stew Black Lentils
Ingredients for 3 people:
- 1 red onion;
- 2 celery stalks;
- 1 carrot;
- 50 ml of Olistico Extra Virgin Olive Oil;
- 120 grams of bacon;
- chopped parsley;
-water (avoid hard and calcareous water);
- salt and pepper.
Wash the lentils (finger cleaning is recommended), dip in cold water with a carrot, celery and onion, cook in water without salt for 20/30 minutes from boiling. Then fry the diced bacon, the finely chopped onion, then add the boiled lentils and the chopped parsley. After cooking, serve with raw Olistico extra virgin olive oil and pepper to taste.
