The Zolfino Bean is the typical bean of Tuscany, which favorite territory are the hills, cultivated among the rows of olive trees. It takes its name from the particular pale yellow color that is very reminiscent of sulfur. According to gourmets this legume melts in the mouth like a wafer; it is characterized by a high degree of digestibility and this is due to its particularly thin skin so as to require pre-soaking of only 2 hours.

It is recommended to serve them hot with the addition of a drizzle of raw extra virgin olive oil and a slice of "bruscato" (toasted) bread.

  • The Zolfino bean has become a cult of Tuscan gastronomy and agriculture, being highly sought after, but unfortunately also rare because its production is very limited. Cultivation requires all the passion this product needs; germination is very difficult, it does not like water very much and storage is not exactly easy, harvesting is done exclusively by hand, to ensure integrity.

    It is a bean that makes itself 'desired' but which, as with all things that require time and processing, rewards with its enveloping and full flavor. Seeing is believing.

    The cooking time on low heat is around an hour or so, depending on the hardness of the water used.
